We drank one of our cellar-worthy wines last night, a regular Saturday night in February. It was not a special occasion, no one was coming to dinner, and we hadn’t even planned on opening that bottle until right before we served the meal. After my first sip, I described the wine as “decadent.” Nate took in the nose of the wine, took a long sip, held the wine in his mouth and smiled. As is his nature, he took a little longer to make his final assessment about the wine. But when he did, he proclaimed it as one of the best wines he’d ever had – top ten, to be exact. This wine we enjoyed last night was none other than a 2005 Williams Selyem Sonoma Coast Pinot Noir. We paired it with French chicken cooked in a pot with lemon jus, roasted fingerling potatoes and Brussels sprouts, and a rustic, crunchy Pain de Campaign.
We have access to Williams Selyem wine, typically available only through restaurant lists, because of our move to Texas. Nate had just moved to Fort Worth and was invited to a wine party by a new friend from work. The host of the party produced from his cellar a Williams Selyem Pinot at the end of the night and Nate was intrigued. So, he went to the Williams Selyem website and added his name to “The List.” His first opportunity to purchase some wine came in February 2007 - an assorted case of 2005 25th Anniversary Pinot Noir. This wine was to be our “cellar-wine”, to enjoy bottles for years to come, as wine we could share with others on special occasions. In fact, we gifted a bottle to Nate’s mom and step-dad and a bottle to his brother, as a way to thank them for all they did for us at our wedding.
This February we were presented with the Spring Williams Selyem release, which offers the 2006 vintage Pinot Noir. We’ll receive our case in late March, and I think we’ll probably need to invest in a bigger wine fridge! Much of this wine will age gracefully in our “cellar”. However, we’ll most definitely enjoy a bottle or two here and there – whether it’s on an ordinary Saturday night or on very special occasions with family and friends.
